Sausage + Veggie Soup

Looking for a quick and easy hearty meal in one bowl? This soup is just that. It takes about 40 minutes to make and will feed you for multiple meals. It's definitely been a crowd pleaser in my home. Try it out. It's super tasty!

  • Italian Pork or Chicken Sausage - 8 links / 2lbs

  • Carrots (3 Large) Chopped

  • Celery (4 Stalks) Chopped

  • Onion (1 large) Chopped

  • Zucchini (2 med/lg) Chopped

  • 1 can of diced low sodium tomatoes

  • 2 boxes low sodium chicken broth

  • 2 cloves garlic

  • 2 tbsp each: oregano, parsley (dried or fresh) + thyme

  • Optional : 2 cups of lentils

Get cooking: In a separate pan, brown Italian sausage and drain off fat/water. In a pot, put all of the ingredients (except the sausage + lentils) and bring to a boil. Once boiling, carefully add the Italian sausage and lentils and let it low boil for 20 minutes. Enjoy!
